pre-christmas sales at Libri

Sziasztok!

Sajnos mostanában nincs túl sok időm a bloggal foglalkozni. Igyekszem majd a téli szabadságom alatt felrakni néhány receptet :) Nem szeretnék senki sem cserben hagyni, főleg azokat nem akik eddig szorgalmasan olvasták, látogatták a blogomat!
Most is csak azért írok egyébként, hogy felhívjam mindenki figylmét, (nem, nem vagyok a Libri marketingese és még csak nem is fizetnek nekem ezért) hogy december 15 és 17 között 20-50% kedvezménnyel lehet szakácskönyveket kapni. Ha lenne időm én is mennék egy-két könyvet venni...mivel nincs, ezért csak hírdetem az igét. Menjetek és vegyetek, mert jó árba vannak a könyvek.

Lúdláb torta or in Hunglish "Goose leg cake" :)

We have the tradition in Hungary of celebrating St Martin's day on the 11th of November (Márton nap). Of course, it comes from a christian heritage but I don't want to go into details. You can check this on wikipedia here: http://en.wikipedia.org/wiki/St._Martin%27s_Day
All in all, this day is the celebration of the new wine (called "újbor") in Hungary and traditionally roast of goose and steamed red cabbage is served to accompany the wine. The goose is strictly connected to the biblical story of St Martin (the goose is a symbol for St. Martin himself) but no no, we are not cannibals, and we are not eating anyone named after this saint...this is all symbolic.
So, you may ask what does this cake has to do with the goose? Do we put goose meat in the cake? Nooo, of course not. According to the explanation that I am aware is that the shape of the cake slice resembles to the goose leg and not the taste :) :) If you have any better explanation, then I am more than happy to welcome that so that I can expand my tiny knowledge of gastronomy.

Lúdláb Torta (Goose leg cake)
List of ingredients for a 23 cm diameter cake tin

Sponge cake: 
4 eggs (white and yolk separated)
60g sugar
1 pinch of salt
40 g flour and 40 g potatoe-starch
1 tbs of cocoa powder (unsweetened)
1 tsp of baking powder

chocolate filling:
250 g butter
90g cocoa powder (unsweetened)
180 g sugar
1.7 dl of double cream

chocolate frosting:
170g dark chocolate
1 or 2 tbs double cream
a knob of butter

to decorate:
7-8 pitted sour cherry (preserve, not fresh)

1. Turn on the oven to 180 degrees and separate the eggs (white from the yolk). Whip the egg whites with a pinch of salt to a stiff stage. Basically, when you turn the bowl upside down then it should not fall out of that. That's the stiff stage. Put the whites aside. Whip the egg yoke with the sugar until it gets pale yellow (takes around 7-10 minutes, use a machine). Sieve the flour, the starch and the cocoa powder along with the baking powder into the egg yolk mixture and carefully mix them with a spatula. Finally add the whipped egg whites and as careful as you can be mix them together. Butter and flour the cake tin and put baking parchment in the bottom of the tin. Pour the raw mixture in the tin, bake it in the over for 12 minutes (don't use the fan). When ready, let it cool on a rack, or on your balcony.

2. For the filling: boil the cream with 2/3 of the sugar and 1/4 of the butter (all in all boil it with some sugar and a tine knob of room temperature butter). Let it boil for 2-3 minutes then add the cocoa powder. Mix them together well, but take off the hob from time to time as it might burn down and then you can start all again. As long as you get a smooth chocolaty mixture you have to stir it manually. When ready, let it cool a bit. Beat the butter with the rest of the sugar (you can add vanilla sugar as well if you may wish) until "fluffy". Mix the butter and the chocolaty cream together as long as it has smooth consistency. Pour the cream on the top of your sponge cake, let it cool in the fridge for 2-3 hours before proceeding. (for me the chocolaty cream was a bit too runny so I put in the deep freeze for 5 minutes before pouring on the sponge cake). For shaping the cake it can help that you put the cake tin around the sponge again (if you have a tine that can easily be dismantled)

3. After 3 hrs of freezing/cooling make the frosting. Melt the butter, the chocolate and the cream  over boiling water (I mean put your bowl on the top of boiling water but make sure that the bowl does not reach the water level because it is going to burn down). Stir as long as it is a smooth chocolate frosting and you can add some rum essence to flavour to taste.

4. Take the cake out of the fridge and pour the frosting over the top. Smear it with a palette knife or spatula until coats the cake evenly. Decorate with pitted sour cherry and cool in the fridge for 1-2 hs till you eat it. (if you can wait...)

Sacher-torta egyszerűen

Sacher-torta


Rég nem írtam. Lehet, hogy nincs is olvasóm már?! Nem tudom. Titkon azért remélem hogy még a "hard-core" supporter-ek azért kitartanak mellettem, és ezzel a recepttel sikerül majd a kárpótolni őket a hallgatásomért.
Ezt a kis leegyszerűsített Sacher-torta receptet ajánlom figyelmébe mindenkinek. Azoknak főleg, akik szeretnének benevezni -vagy már megtették- az éves cookie competition-re (aki tudja, hogy miről beszélek az tegye fel a kezét :) Aki nem, az meg hívjon fel és megmondom!) és azoknak is akik nem. Igen egyszerű recept ez és higyjétek el, hogy akik enni fognak belőle azok majd hallani vélik a halleluját és utána esti imájukba fogják elrebegni a nevünket, hálát adva ezért a tortáért. Igen, igen  a torta azt a benyomást kelti az egyszeri fogasztóban, hogy áldozatos, sok óra,  konyhai álldogálás és kemény munka eredménye...pedig neeem. Elárulom, hogy nagyon egyszerű és bárki nyugodtan hozzáláthat, mert se nem időigényes, se nem bonyolúlt. Csak aztán majd győzzétek begyűjteni a dicséretet utána. Én szóltam :)


Sacher-torta (23 cm-es tortaformában sütve)

50g darált dió
50 g graham liszt
50g (sima) fehér liszt
150g vaj
6 tojás (fehérje és sárgája külön választva)
200g cukor
150g csokoládé (olvasztva)
1 zacskó bourbon vaníliás cukor
1 narancs lereszelt héja
1/2 narancs leve
1kk. sütőpor

tölteléknek:
házi vagy bolti: baracklekvár

bevonat:
150g csokoládé
1 ek olaj

1. Kapcsoljuk be a sütőt 180 fokra.Verjük fel a tojásfehérjét egy csipet sóval. Tegyük félre. A tojás sárgákat keverjük ki jól a cukorral és a vaníliával (kb. 10-15 perc). Adjuk hozzá a szobahőmérsékletű vajat (ne margarint lécci) a narancs héját és levét. Keverjük tovább, amíg nem kapunk egy selymes halványsárga krémet.

2. Az előzőleg gőz fölött felolvaszott, majd lehűtött csokoládét hozzáadjuk a tojássárgához, elkeverjük egy spatulával. Beleszitáljuk a liszteket, majd hozzáadjuk a darált diót és a sütőport is, jól elkeverjük. A tojásfehérjét óvatosan a lisztes keverékhez adjuk, majd előzőleg kivajazott, lisztezett és sütőpapírral bélelt formába öntjük és a 180 fokos sütőben megsütjük (nem írok időt, mert ez midnenkinek egyénileg a sütője teljesítményétől függ). Akkor jó a torta, ha az oldala egy kicsit elválik a formától, és kiállja a tűpróbát is.

3. Kihűtjük a tortát. Kettévágjuk a tortát és vastagon megkenjük a lekvárral majd a csokoládébevonattal egyenletesen bevonjuk a tetején és az oldalán is.

Carrot cake for a farewell

Szilvi has left us. Not forever, thank God,  but only for the time being. She is going to have a new life, different from the one that she got used to in the office. She is going to be a mum and I have no doubt that she will enjoy this just as much as (or hopefully even more) than working with us for years.
I asked her what she would like to get from me as "leaving" present and she wanted to get a carrot cake. Unfortunately, I won't be able to publish a picture of the cake as I don't have the facility of taking photos in the office but I hope that everyone can imagine the cake (who has not seen that), which is full of goodies such as carrots, orange zest and wholegrain stuff.

Cake (for a 23 cm diameter cake tin) Prep. 15 mins, baking 45 mins.

250 g margarine/butter
250g brown sugar
 1 orange's zest and freshly squeezed juice
4 eggs
300 g carrot (peeled and grated)
150 g grated walnut
1 tbs vanilla sugar
250 g flour (mixture of wholegrain and plain flour)
2 tsb bicarbonate of soda
1 tsp all spices
1 tsp salt

Frosting:
200g room temp. Philly cream cheese
50 g room temp. butter
300 g icing sugar
1/2 lemon's freshly squeezed juice

Turn on the oven to 190-200 degree Celsius.
Peel and grate the carrot. Mix the butter with the sugar (both brown and vanilla), until it is pale yellowish (or actually brownish from the sugar). Add the egg one by one to the mixture and keep whisking. Add the orange zest and juice, keep on whisking. Add the grated carrot, the walnut the flour and the spices etc. (called dry ingredients) fold in carefully.
Butter and flour the bottom of the cake tin and put a grease-proof paper in that (tailored to fit). Pour the mixture in the prep. cake tin and bake in the oven for 45 minutes. When checking if the the cake is ready then poke a toothpick in the middle and if it comes out clean then your cake is ready. Let the cake cool.

For the frosting, I made a mistake that I mixed melted butter with fridge cold cream cheese-- Don't do it--.
So sieve the icing sugar, add the lemon juice, start mixing. Add the room temp. cream cheese and the butter. Let it cool down in the fridge and then use it as you wish-. It can be only frosting or filling as well. Main thing is that you let the frosting dry on the cake on room temperature! Enjoy.

Tepertős pogácsa - hello!

Az öcsém megkívánta a múlt héten a tepertős pogácsát. El is ejtett egy megjegyzést, hogy mostanában a pékségekben kapható tepertős pogácsák (nálunk így mondják, mielőtt még valaki felhördülne, hogy az ám töpörtyús...) már nem olyanok, mint gyermekkorunkban (mondja ezt ő a 22 évével...:). Tény, hogy a nagyi és az anyu pogácsáját nem lehet felülmúlni holmi ipari pogácsával, viszont igazán jó, hajtogatott tepertős pogácsát sem annyira könnyű csinálni, ezért igazából elment a megjegyzés a fülem mellet...majd múlt pénteken voltam a vásárcsarnokban ("véletlenül" átmenőbe) és gyorsan vettem 25 dkg tepertőt.
Mivel a tepertős pogácsa nem csak finom, de eléggé időigényes is (nem mintha a kettő kapcsolatban állna egymással) ezért a készítéséhez szerintem hétköznap nem érdemes nekiállni (hacsak vki nem időmilliomos). De én ezt is megoldottam. Péntek este kezdtem el csinálni, és szombat reggel sütöttem ki :) Nem viccelek, bajnok lett a pogácsa. Csak van egy rossz tulajdonsága ennek a pogácsának, mégpedig, hogy könnyen szublimál. Vasárnap reggelre a tároló dobozba már morzsa sem volt...különös módon eltűnt az összes pogácsa. Ki érti ezt?! :D


tepertős pogácsa
Recept (előkészület kb. 15 perc, dagasztás, kelesztés, hajtogatás - sok idő, sütés: kb. 20 perc): 

  • 1,5 dl tejföl
  • 1 dl tej
  • 1 egész tojás
  • 2 tk. só
  • 1 ek balzsamecet (igen, jól látod, kell az is bele)
  • 10-12 dkg margarin vagy vaj
  • 60 dkg liszt (ha van kenyérliszt akkor az is jó, de sima liszt is megfelelő)
  • 1 tk. cukor
  • 1 tasak szárított élesztő
  • 25 dkg darált tepertő
  • só, bors
Mivel én mázlista vagyok, és van kenyérsütő gépem, ezért nekem nem kell bajlódni a dagasztással és miegymással. De mivel tudom, hogy nem mindenki van abban a szerencsés helyzetben, hogy a gépe dolgozzon, ezért leírom, hogy kb. milyen a kezdeti folyamat.
Lisztet átszitáljuk. A közepébe csinálunk egy mélyedést, és oda öntjük a langyos, cukros tejben feloldott élesztőt (Fontos, hogy ha manuálisan csinálunk mindent, akkor a hozzávalók legyenek szobahőmérsékletűek). Elkezdjük kézzel keverni, de elég merev, mozdulatlanok legyenek az ujjaink. Mintha egy karom lenne a kezünk, kavargassuk szépen a lisztet és az élesztőt (vicces, de ez így működik). Ha sikerül nagyjából elvegyíteni, akkor adjuk hozzá egyesével a többi hozzávalót a tepertőt kivéve (a só nem váletlenül kétszer van benne. Kell az a két teáskanál a tésztába, meg a tepertő krémhez is kell egy kicsi só. Nem lesz túl sós. De aki nem szereti vagy diétázik, az csökkentse bátran a só mennyiségét). Egy szép homogén tésztát kell kapnunk, amit elkezdhetünk gyúrni. Én ha kézzel dolgozok, akkor kb. 5-7 percet szoktam gyúrni a tésztát a kelesztés előtt.
Ezután kb. 40 percet kell keleszteni. Míg kel a pogácsa, addig le kell darálni a tepertőt, de figyeljünk rá, hogy a bőrét ne darájuk bele, mert az eléggé darabos maradhat, ami ha belesül a pogácsába, akkor megkeményedik és esetleg kellemetlen pillanatot nyújhat, ha egy kemény bőrdarabra ráharapunk (és nyílván senki sem akar munkát adni a fogorvosának, ha nem muszáj...). Szóval darájuk, sózzuk borsozzuk. Aki szereti a csípőset, akkor az rakjon bele csiliport is.
Ha megkelt a pogácsa, akkor nyújtsuk ki kb. fél cm vastagságú téglalapra. Kenjük meg a tepertővel, és gondolatban harmadoljuk el a téglalapot és hajtsuk be jobbról is és balról is, hogy a lapok egymást fedjék. Majd ha ez megvan, akkor 90 fokot fordítunk rajta, és megint téglalap alapúra nyújtjuk. (óvatosan, mert szakadhat. Ha szakad, akkor nekem az vált be, hogy egy kicsit lisztezem az kiszakadt részt és dolgozok tovább) Ismét három részre osztjuk a téglalapot, és most alulról és felülről is behajtjuk. Majd 30 percig kelesztjük. Ezt a folyamatot háromszor megismételjük (gyúrni már nem kell, mert akkor sosem lesz leveles tésztánk :). Ha kész van a harmadik hajtogatás, nyújtás, megint hajtogatá stb. akkor vagy hűtőbe rakjuk éjszakárni vagy elkezdünk dolgozni vele.
Ha frissen dolgzunk vele, akkor kinyújtjuk kb 2 cm vastagságúra, éles késsel rácsozzuk a tetejét, tojással megkenjük és pogácsaszaggatólval kiszaggatjuk. Sütés előtt 30 percig még kelesztük.
A tepsibe sütőpapírt rakunk és arra helyezzük a pogácsát. 180- 200 fokos sütőben 18- 20 percig sütjük. Akkor jó, ha az alja is szép barna (neeeem fekete).
Ha marad tésztánk amit már nem tudunk szaggatni, akkor én simán össze szoktam gyúrni, megint nyújtani, lekenni, szaggatni stb. pedig a nagykönyv szerint ezt nem szabad. Eddig nekem még ezzel nem volt problémám.
Ha egy éjszakára hűtőbe rakjuk a nyers pogácsa tésztát, akkor feltétlenül vagyük ki egy órával sütés előtt és akkor dolgozzunk vele tovább ha már szobahőmérségletű lesz.

THE ULTIMATE BROWNIE

Yes, I have to say (without being pompous) that last weekend I baked the best brownie of my life! It was so lovely, gooey, chewy and dense inside and at the same time crunchy on the outside. But...let the pictures talk for themselves. (no, this slice was not broke but the missing bits were rather eaten by someone... :)

brownie 
Brownie (prep. 20 mins, baking 30 mins)

150 g flour
1 tsp salt
2 tbs cocoa powder
400 g dark chocolate
220g butter
110g brown sugar
220 g caster sugar
5 eggs
1 pack of vanilla sugar
50g desiccated coconut
1 overripe banana

Turn on the oven to 180 degrees.
Melt the chocolate (Mr Microwave is my friend) at a low temperature. Let it cool to room temperature if overheated. Mix the two (actually three with the vanilla) types of sugar, and beat with the melted butter until the sugar dissolves. Add the eggs one by one and beat it with the food processor for 2-3 minutes (not more. too much air will prevent the brownie from being thick and chewy). Mash the banana with a fork and add to the liquid ingredients. Finally, add the melted chocolate to the mixture.
Sieve the flour, cocoa powder and the salt into the chocolate mixture. Add the coconut and stir evenly (it does not need too much stirring).
Pour the mixture into a baking tin (25cm x 35 cm) and bake in the oven for 30 minutes. When checking if ready poke a toothpick into the brownie and if it comes out almost clean (it does not have to come out clean) then it is ready. Take out of the oven immediately. Don't over bake it because it will end up in a dry piece of brick. Enjoy (I am sure that you will)!

cream soup with H.M. baguettes

Yes, yes I am afraid. It is hot cream soup, hot tea and whatever can be consumed hot... time of the year. I have been telling to my hubby from the end of August "winter is coming" and indeed today's weather is also a good sign of that. 
I actually make this kind of soup out of any kind of combination of root vegetables throughout autumn and winter and it is indeed part of the comforting cold weather "diet", which meant to give you some warmth in the coldish, wet and sometimes depressingly grey (short) days.

Creamy leek and potatoe soup (prep. 10 mins, cooking 20 mins)

1 big long leek
1 big potatoe
2 carrots
cca. 500 ml stock
cca. 150 ml cooking cream
salt, pepper and grated nutmeg to taste
1 tbs olive oil
20g butter

Melt the butter and the olive oil. Clean, wash and slice the leek, put it on the oil. Add salt and pepper, and let it cook for 5 mins on a low temperature. Peel the potatoe and the carrots and dice them. Important that they are the same size otherwise they will not cook evenly.
Add the potatoe and the carrot cubes to the leek and let it simmer together. Pour the stock over the veggies and cook for at least 20 mins (or until they start falling apart).
Put the vegetables in a blender (without the stock) and add the cream. Blitz is for 2-3 mins until it gets smooth consistency.
Pour the mash back to the stock and season it with pepper and grated nutmeg. Serve with dripping of olive oil on the top.
The variation of vegetables used in this soup just depends on personal taste and the content of your pantry :)

sütőtökös muffinok

Rég nem írtam már, épp itt az edeje egy jó kis muffin receptnek! :) Méghozzá sütőtökös muffin-nak. A Csarnok tele van már most sütőtökkel, pedig szerintem még annyira nincs is itt a szezonja a töknek (habár, ha azt nézzük, hogy most már minden féle gyümölcsöt-zöldséget lehet kapni szezontól függetlenül...bele se gondolok, hogy hogyan, miért és honnan jönnek mondjuk a szép kis paradicsomok a tél közepén, meg ilyenek. Na, mindegy) Szóval volt otthon maradék sütőtök, mégpedig azon okból, hogy a múlt héten a vegetáriánus vendégünknek indian sütőtökös curry-t főztem és a maradékot szépen elraktam a hűtő mélyébe...ami a szombati nagybevásárlás után akadt a kezembe.
Egy kicsit már elfáradt a tök a hűtő mélyén (értsd: már puhább lett egy kicsit), de úgy gondoltam, hogy süteménybe még pont jó lesz.

Sütőtökös muffin:
36.5 dkg sütőtök (megpucolva, felkockázva, megfőzve)
2 egész tojás
150g étcsokoládé (jó lesz az a Szerencsi a szekrény mélyéről...:)
20 dkg barnacukor
1,5 dl olaj
40 dkg lisz
100g kókuszreszelék
3 tk sütőpor
1 vaníliás cukor
2 ek tej
2 tk fahéj

A tököt felhasználás előtt főzzük meg, majd villával törjük össze. Adjuk hozzá az ún "nedves" anyagokat (tojás, olaj, tej, cukor) keverjük el jól. Adjuk hozzá a sütőporos lisztet, a kókuszreszeléket, vaníliás cukrot stb. összefoglaló néven a száraz anyagokat, keverjük el (nem kell nagyon kidolgozni) majd a végén adjuk hozzá a csokoládét (lehet használni pasztillát, vagy késsel felvágni a táblás csokoládét apró darabokra). Adagoljuk a masszát muffin formába és 200 fokos sütőben kb. 30 percig süssük.

pogácsa for rainy days

Awful, awful weather we are having lately. It is just not fair that everyone expects a nice Indian summer and instead what we have is rather normal in November then in early September. On the top of that I had a horrible day yesterday. Don't really want to elaborate on that but just for those who understands...the key words were: 8.5.1 and then consistency. If you know what they mean, then you might say "yeah that sucks" if you don't, then I can tell you that it took me one entire working day to get over with them.
So, having no better things to do but browsing on the net I found a nice recipe, whose author said that "this is a kind of snack that is so tasty that you almost feel that you commit a sin eating it and then you want some more" I thought I have to try this :) so that I make something useful with my late afternoon, while the rain was knocking on the window-pane...
pogácsa


Poppy seed pogácsa:
350 g flour
35g poppy seed
1.5 tsp sea salt
150g butter /margarine
100g cream cheese
2 eggs
1 sachet of baking powder
2 tbs of milk
linseed and sesame seed

Put the dry ingredient into a big bowl. Add the butter or margarine (cut it into cubes so easier to handle), the cheese, the egg yokes and try to incorporate them into the flour. Once they feel like sand, then add the milk and make it into a dough. You don't have to overwork this because then the butter will melt and then the pogácsa is going to be too crumbly, falling into atomic small pieces when eaten. So no need for kneading at all. Put the dough into the fridge for one hour. Once chilled, take it out of the fridge and you have to work quickly.
Heat the oven to 190 degrees and in the meantime roll the dough out to 1.5 cm thick on a floured surface. 
Either cut them into squares or use your cookie cutter to make funny little pogácsas. (Mine looked like buttons.) Put them on your baking sheet.
Brush it with the egg white and then put any of your favourite seed on the top.
Cook the pogácsas for 15 mins in the oven.

csiga és kígyó

Nem, nem...nem az amire gondoltok, vagy lehet, hogy éppen az, amire gondoltok :-) Szóval nem tértünk át a hüllők és puhatestűek fogyasztására, csak én voltam megint alkotó kedvembe tegnap.
Már említettem, hogy vannak vendégeink és gondoltam csinálok valami kalácsfélét, amit elvihetnek magukkal a suliba tízóraira vagy uzsonnára...sajnos nagyon gyorsan kiderült, hogy akkora igény nincs a kalácsomra (mint hittem, hogy lesz) és a sok kalács nem fog elfogyni egyáltalán...se tízórainak, se uzsonnának  - sehogyse. Lelki szemeimmel már láttam a szomorúan száradozó kalácskákat és megesett rajtuk a szívem.
Ezért most az én és a férjem kollégái fogják elmajszolni a fahéjas csigákat és a kígyót :) Így jártam. Legközelebb előre egyeztetek majd, és ízlésnek megfelelően fogok kalácskát csinálni. Mindig tanul az ember.

Szóóval fahéjas/mézeskalácsos ízű kelt tésztát csináltam. Nem egy ördöngősség, csak egy kis idő és türelem kell hozzá. A recept eredetije a Kifőztük online magazin legújabb számában taláható. Hála és köszönet a pontos receptért és a jó ötletekért a szerzőknek! :-)

Recept: (előkészület kb. 10-15perc, plusz kelesztés. Sütés 15-17 perc. a kalács méretétől függ)
Tészta:
250 ml tej
1 tasak szárított élesztő
90 g cukor
2 tojás (plusz 1a tetejére)
400g liszt
100g teljeskiőrlésű liszt
1 csipet só
80g vaj (olvasztott)

töltelék:
60g vaj
150g cukor
1,5 ek fahéj
1 púpos tk mézesfűszerkeverék

1. A tésztát a kenyérsütő géppel kidologzzuk, és kelesztjük. Ha nincs ilyen gépünk, akkor manuálisan összeállítjuk (a hozzávalók szobahőm.legyenek). Az élesztőt nem kell külön futtatni, ha szárított. (ha friss az élesztőnk, akkor kb. 12 g élesztőt 1 dl langyos tejben a cukor 1/10 részével futtatjuk). Kicsit gyúrjuk a tésztát, majd meleg helyen kelesztjük.

2. A sütőt bekapcsoljuk 200 fokra. Mikor a tészta megkelt, akkor enyhén lisztezett gyúródeszkán ketté vágjuk, és az egyik cipót kinyújtjuk kb. 30x50 cm-es téglalappá a másikat letakarva pihentetjük. A vajat megolvasztunk, és megkenjük a kinyújtott tésztát. A tölteléket előkészítjük (vagyis a cukrot és a fehéjat, meg a fűszert összekeverjük egy tálban). Megszórjuk a tésztát a töltelék felével, majd szorosan feltekerjük. Mivel én az első cipót elég vékonyra nyújtottam, ezért nem tudtam volna szépen szelni, így kígyó alakban feltekertem. A kilógó véget a kalács alá bedugtam, hogy még véletlenül se jöjjön ki a töltelék belőle. Megkenjük felvert tojással, majd szórunk rá a töltelékből a tetejére is, így kívül ropogós belül pedig foszlós lesz.

3. A másik cipóval is hasonlóan "bánunk" el, csak azt nem tekerjük föl, hanem 12 részre vágjuk. Ha van muffin formánk, akkor rakunk bele papírkapszlikat, és abba ültessük a tekercseket, úgy hogy a töltelékes oldala felfelé nézzen. Ha nincs, akkor telsibe rakjuk őket, kb. 2 cm távolságra egymástól, és megkenjük a tetejüket. Azért hogy halmozzuk az élvezeteket, még szórhatunk a tojásra a töltelékből (ha marad) és barnára sütjük a sütőben. A muffinkák kb. 17 percig, a kígyó pedig kb. 28 percig sült a 200 fokos sütőben.

Indian dinner

We are having guests since Friday. For their first night dinner I wanted to make something "new" for them. Neither of them has ever eaten Indian food, so I though that it is high time that they try it. I hope that the curry I made was a good initiation into these flavours and Indian is going to be part of their diet in the future.
I made ginger chicken curry and naan bread.

Lovely, lovely gingery, yellowish curry and soft (bit chewy) naan bread...hmmmm


Ginger chicken curry: (prep.20 mins plus marinating, cooking 35 mins)
1 kg fileted chicken thighs
1 thumb-size ginger (peeled and grated)
2 spring onions
1 tsb chilli powder
1 fresh red chilli (sliced)
1 lime (zest and juice both needed)
1 bunch of fresh coriander (chopped)
2 tbs sunflower oil
1 tsp ground turmeric
400 ml can coconut milk
1 chicken stock cube

1. Remove the skin of the chicken and slice them into 2-3 cm size cubes. Mix the ginger, the chilli powder, the fresh chilli, half of the coriander, the lime zest and juice and one tablespoon of the sunflower oil. Put the chicken into this marinade and then leave in the fridge overnight. If you don't have much time, then let the marinade do the business for 5 mins and then proceed with cooking.

2. Heat the oil in a pan or wok. Soften the spring onion in the hot pan for 5-6 minutes but don't let it burn. Add the ground turmeric and let it cook for 1 minute. Add the marinated chicken into the pan and let the turmeric coat the chicken evenly. Let the meat sizzle, and then pour in the coconut milk. Last but not least add the chicken stock cube and let it cook for 35 minutes.

3. Serve the chicken with naan bread or poppadoms and rice. Decorate the curry with coriander leaves.

Naan bread (prep. 20 mins, cooking 5-6 mins)
500g flour (strong bread flour)
1 sachet of dried yeast 
1 tsp. salt
1tsp sugar
2 tbs yoghurt
2 tbs sunflower oil
250 ml warm water

1. Put the flour into a big bowl. Make a well into the middle. Pour the yeast, the sugar and the salt in the well. Add some of the water and let the yeast work. It starts working when you see bubbles appearing.

2. Incorporate the yeast into the flour add the rest of the water, yoghurt and start kneading. You need to get some sticky, thick mixture (like liquid rubber) but don't add more flour. Add the oil, work that into the dough until or it separated from the bowl and makes a ball.

3. Let the dough rest for an hour (or 30 mins minimum) and when doubled in sized then with a floured hand tear them into balls (tennis ball size). Let them rest for 10 mins and in the meantime turn on the oven to the highest temperature (mine can make 250 degrees).

4. Shape the dough and put the naans on a baking sheet, leaving 2 cm between between them. Put the bread in the oven on the highest rack and turn on the grill (if you have any). Bake the bread for 2,5 mins on each side. Brush the with melted butter (or ghee if you have) while it is hot.Serve with your curry!

wholegrain bread for Szilvi Cz.

Dear Szilvi,

As you requested I am sending you the bread recipe that you asked from me the other day.

This recipe was taken from the lovely Limara (http://limarapeksege.blogspot.com/) and adapted to my hubby's taste.
As I told you try to put the liquid ingredients into your bread-making machine and then the flour on the top.

Ingredients: 
250ml lukewarm tapwater
150g yoghurt or light sour cream
20g oil or butter
1,5 ts salt
1 tbs vinegar (I use balsamic vinegar as it gives the bread a deeper brown colour)
2 tbs potatoe flakes
300 g strong bread flour (BL80) - if you don't have any then mix. 150 g plain flour with 150 g rétesliszt :)
110 g rye-flour
150g wholegrain flour (I use tönköly)
1ts caster sugar
12-15g fresh yeast (I usually break them into as little crumbs as I can)
Linseed and sesame seed to be added for taste

Put the ingredients into your bread-making machine in the above described order. I use the quick, wholegrain bread program for baking. The timing is normally around 2hs 28 minutes.

muffins that were not meant to be

So as I mentioned the weekend was very fruitful...not because we were doing anything special but I was baking like no tomorrow. I wanted to make Real Sticky Toffee Pudding (with capital letters) but changed my mind in the last minute and turned them into muffins. Also wanted to make Courgette Cake, that I found in the Good Food Mag., but they also turned out to be muffins...and then the last thing, also did not turn out to be as it meant to be, was the result of my clumsiness.
1. Chocofee Sticky Muffins (prep. 20 mins, cooking 30 mins):

Muffins
200g dried, pitted dates
250 ml tea (black, not too strong)
half tsp bicarbonate of soda
half tsp baking powder
90 g melted butter
180 g plain flour
1 tsp mixed spice (http://en.wikipedia.org/wiki/Mixed_spice)
175 g caster sugar
2 eggs
Turn on the over to 180 degrees. 

Cook the pitted dates in the black tea for 3-4 minutes (I used my friend, the microwave) then let it cool. Beat the eggs and the sugar, add the melted butter. Sieve the dates, chop and add to the mixture. Add the spice and the dry ingredients. Stir carefully and then distribute evenly in the muffin holes. Bake in the oven for 30 mins. When ready, let it cool and dip the top in the chocofee. Decorate to taste.


Chocofee:
100g caster sugar
100g butter
145 ml double cream
50g dark chocolate

Put the sugar in the pan, let it caramelize. Add the butter, let it melt and then add the cream. Let it bubble together but stir frequently so it does not burn. Take off the heat and add the chocolate. Let the chocolate melt in the toffee and then ready to use.

2. Courgette Muffins with lime icing (prep. 20 mins, cooking 30 mins):

Muffins:
125 g butter
1 big lemon (juice and zest)
100g caster sugar
2 small eggs
1 medium courgette (150 g peeled, and seeded)
1 tbs poppy seed
1 tbs vanilla sugar
50g plain flour
50g wholemeal flour
1 tsp baking soda
1 tsp baking powder

Turn on the over to 180 degrees.
Beat the butter with the caster sugar, vanilla sugar and eggs. Add the juice and the zest of the lemon. Grate in the courgette (we don't need the seeds) and mix evenly. Add the dry ingredients (i.e.:  poppy seed, two types of flour, bic. of soda and baking powder). Spoon into the muffin tray's holes and bake in the over. Decorate with the icing or with the chocofee.

icing:
2 tbs icing sugar
juice of half of a lime

Mix the icing sugar with the juice of the lime. Add the juice gradually so that you can see the consistency of the icing and prevent that it becomes too runny. Decorate the top of the muffins.

3. Banana pralines (prep.5 mins, no cooking involved):

I might be too pompous to call these little aliens pralines but did not find any better word for it...
This idea (it is not a recipe to be honest) was taken from the Doctor of Dr Peppers (DP, csak a puffin) and adapted a little bit.

My changes are the following: 1. grated the biscuits myself  (I mean, I used my machine to grate the biscuits)
2. added some gelatin powder to the banana, sugar mash (was not sure whether gelatin does any good for that or not but I though that it could not hurt)
3. used the star shaped ice-cube silicone form for the freezing (I had this idea of making stars instead of balls but with little success) and shaped the left over to balls only.

Took them in the freezer for 30 mins and then after checking found them too soft so left them there for an extra 20 mins.
After freezing (I assume I could have left them for days if not used/eaten immediately) I tried to dip them into the chocofee to give them a coating but as the photo shows the chocofee covered them partially only. Especially the balls look like meatballs with some brown sauce...  but never judge the book by the cover...Besides the ugly look the chocofee, banana pralines taste good :)

first day as a blogger

Let me please introduce myself. Hello, my name is Aliz, Aliz Moore to be precise. From Budapest. Married woman with an Englishman hubby, a pug and a cat. This is my very first entry as blogger.
Just decided to share my non-professional, clumsy recipes with you to entertain you and to leave my footprint for the next generation.
I have a confession to be made: there are so many food blogs (a.k.a. gastroblogs) on  the internet that for a long time that was the reason why I did not start my own food blog. But something has changed in my today...don't know. Maybe the nice autumn weather that gave me this delirious inspiration to share my recipes with the virtual community of the internet, or maybe the wine that I was drinking...God knows.
As I mentioned I am very clumsy I mean, VERY CLUMSY and there is nothing wrong with that but it gives me barriers and inhibition sometimes. As a result of this clumsiness of mine, I myself will not take any photos. So any photos published on this blog will be taken by my lovely hubby.
Anyway, we had a busy weekend, from cooking point of view. I made the usual stuff on Sunday (that is chicken drumsticks in breadcrumbs) but I dedicated some time for other delicacies as well.
I have been thinking about trying some of the recipes that I saw on Celebrity Masterchef and read in Good Food but so far the summer heat prevented me from turning on the oven, let alone going close to that at all.
So I wanted to make Duck Au Vin but we did not get any duck so it became Cock Au Vin (recipe will follow).
Then on Sunday, hm, I went crazy in the kitchen. Started off with the lovely idea of making some sticky toffee pudding and ended up with two different muffins, and a kind of praline. That is going to be my next entry, my very second one. Hey, happy days. My blog is rolling... :) Thanks for your attention!
