Sajnos mostanában nincs túl sok időm a bloggal foglalkozni. Igyekszem majd a téli szabadságom alatt felrakni néhány receptet :) Nem szeretnék senki sem cserben hagyni, főleg azokat nem akik eddig szorgalmasan olvasták, látogatták a blogomat!
Most is csak azért írok egyébként, hogy felhívjam mindenki figylmét, (nem, nem vagyok a Libri marketingese és még csak nem is fizetnek nekem ezért) hogy december 15 és 17 között 20-50% kedvezménnyel lehet szakácskönyveket kapni. Ha lenne időm én is mennék egy-két könyvet venni...mivel nincs, ezért csak hírdetem az igét. Menjetek és vegyetek, mert jó árba vannak a könyvek.

Lúdláb torta or in Hunglish "Goose leg cake" :)

We have the tradition in Hungary of celebrating St Martin's day on the 11th of November (Márton nap). Of course, it comes from a christian heritage but I don't want to go into details. You can check this on wikipedia here: http://en.wikipedia.org/wiki/St._Martin%27s_Day
All in all, this day is the celebration of the new wine (called "újbor") in Hungary and traditionally roast of goose and steamed red cabbage is served to accompany the wine. The goose is strictly connected to the biblical story of St Martin (the goose is a symbol for St. Martin himself) but no no, we are not cannibals, and we are not eating anyone named after this saint...this is all symbolic.
So, you may ask what does this cake has to do with the goose? Do we put goose meat in the cake? Nooo, of course not. According to the explanation that I am aware is that the shape of the cake slice resembles to the goose leg and not the taste :) :) If you have any better explanation, then I am more than happy to welcome that so that I can expand my tiny knowledge of gastronomy.
Lúdláb Torta (Goose leg cake)
List of ingredients for a 23 cm diameter cake tin
Sponge cake:
4 eggs (white and yolk separated)
60g sugar
1 pinch of salt
40 g flour and 40 g potatoe-starch
1 tbs of cocoa powder (unsweetened)
1 tsp of baking powder
chocolate filling:
250 g butter
90g cocoa powder (unsweetened)
180 g sugar
1.7 dl of double cream
chocolate frosting:
170g dark chocolate
1 or 2 tbs double cream
a knob of butter
to decorate:
7-8 pitted sour cherry (preserve, not fresh)
1. Turn on the oven to 180 degrees and separate the eggs (white from the yolk). Whip the egg whites with a pinch of salt to a stiff stage. Basically, when you turn the bowl upside down then it should not fall out of that. That's the stiff stage. Put the whites aside. Whip the egg yoke with the sugar until it gets pale yellow (takes around 7-10 minutes, use a machine). Sieve the flour, the starch and the cocoa powder along with the baking powder into the egg yolk mixture and carefully mix them with a spatula. Finally add the whipped egg whites and as careful as you can be mix them together. Butter and flour the cake tin and put baking parchment in the bottom of the tin. Pour the raw mixture in the tin, bake it in the over for 12 minutes (don't use the fan). When ready, let it cool on a rack, or on your balcony.
2. For the filling: boil the cream with 2/3 of the sugar and 1/4 of the butter (all in all boil it with some sugar and a tine knob of room temperature butter). Let it boil for 2-3 minutes then add the cocoa powder. Mix them together well, but take off the hob from time to time as it might burn down and then you can start all again. As long as you get a smooth chocolaty mixture you have to stir it manually. When ready, let it cool a bit. Beat the butter with the rest of the sugar (you can add vanilla sugar as well if you may wish) until "fluffy". Mix the butter and the chocolaty cream together as long as it has smooth consistency. Pour the cream on the top of your sponge cake, let it cool in the fridge for 2-3 hours before proceeding. (for me the chocolaty cream was a bit too runny so I put in the deep freeze for 5 minutes before pouring on the sponge cake). For shaping the cake it can help that you put the cake tin around the sponge again (if you have a tine that can easily be dismantled)
3. After 3 hrs of freezing/cooling make the frosting. Melt the butter, the chocolate and the cream over boiling water (I mean put your bowl on the top of boiling water but make sure that the bowl does not reach the water level because it is going to burn down). Stir as long as it is a smooth chocolate frosting and you can add some rum essence to flavour to taste.
4. Take the cake out of the fridge and pour the frosting over the top. Smear it with a palette knife or spatula until coats the cake evenly. Decorate with pitted sour cherry and cool in the fridge for 1-2 hs till you eat it. (if you can wait...)

Sacher-torta egyszerűen

Rég nem írtam. Lehet, hogy nincs is olvasóm már?! Nem tudom. Titkon azért remélem hogy még a "hard-core" supporter-ek azért kitartanak mellettem, és ezzel a recepttel sikerül majd a kárpótolni őket a hallgatásomért.
Ezt a kis leegyszerűsített Sacher-torta receptet ajánlom figyelmébe mindenkinek. Azoknak főleg, akik szeretnének benevezni -vagy már megtették- az éves cookie competition-re (aki tudja, hogy miről beszélek az tegye fel a kezét :) Aki nem, az meg hívjon fel és megmondom!) és azoknak is akik nem. Igen egyszerű recept ez és higyjétek el, hogy akik enni fognak belőle azok majd hallani vélik a halleluját és utána esti imájukba fogják elrebegni a nevünket, hálát adva ezért a tortáért. Igen, igen a torta azt a benyomást kelti az egyszeri fogasztóban, hogy áldozatos, sok óra, konyhai álldogálás és kemény munka eredménye...pedig neeem. Elárulom, hogy nagyon egyszerű és bárki nyugodtan hozzáláthat, mert se nem időigényes, se nem bonyolúlt. Csak aztán majd győzzétek begyűjteni a dicséretet utána. Én szóltam :)
Sacher-torta (23 cm-es tortaformában sütve)
50g darált dió
50 g graham liszt
50g (sima) fehér liszt
150g vaj
6 tojás (fehérje és sárgája külön választva)
200g cukor
150g csokoládé (olvasztva)
1 zacskó bourbon vaníliás cukor
1 narancs lereszelt héja
1/2 narancs leve
1kk. sütőpor
tölteléknek:
házi vagy bolti: baracklekvár
bevonat:
150g csokoládé
1 ek olaj
1. Kapcsoljuk be a sütőt 180 fokra.Verjük fel a tojásfehérjét egy csipet sóval. Tegyük félre. A tojás sárgákat keverjük ki jól a cukorral és a vaníliával (kb. 10-15 perc). Adjuk hozzá a szobahőmérsékletű vajat (ne margarint lécci) a narancs héját és levét. Keverjük tovább, amíg nem kapunk egy selymes halványsárga krémet.
2. Az előzőleg gőz fölött felolvaszott, majd lehűtött csokoládét hozzáadjuk a tojássárgához, elkeverjük egy spatulával. Beleszitáljuk a liszteket, majd hozzáadjuk a darált diót és a sütőport is, jól elkeverjük. A tojásfehérjét óvatosan a lisztes keverékhez adjuk, majd előzőleg kivajazott, lisztezett és sütőpapírral bélelt formába öntjük és a 180 fokos sütőben megsütjük (nem írok időt, mert ez midnenkinek egyénileg a sütője teljesítményétől függ). Akkor jó a torta, ha az oldala egy kicsit elválik a formától, és kiállja a tűpróbát is.
3. Kihűtjük a tortát. Kettévágjuk a tortát és vastagon megkenjük a lekvárral majd a csokoládébevonattal egyenletesen bevonjuk a tetején és az oldalán is.

Carrot cake for a farewell
Szilvi has left us. Not forever, thank God, but only for the time being. She is going to have a new life, different from the one that she got used to in the office. She is going to be a mum and I have no doubt that she will enjoy this just as much as (or hopefully even more) than working with us for years.
I asked her what she would like to get from me as "leaving" present and she wanted to get a carrot cake. Unfortunately, I won't be able to publish a picture of the cake as I don't have the facility of taking photos in the office but I hope that everyone can imagine the cake (who has not seen that), which is full of goodies such as carrots, orange zest and wholegrain stuff.
Cake (for a 23 cm diameter cake tin) Prep. 15 mins, baking 45 mins.
250 g margarine/butter
250g brown sugar
1 orange's zest and freshly squeezed juice
4 eggs
300 g carrot (peeled and grated)
150 g grated walnut
1 tbs vanilla sugar
250 g flour (mixture of wholegrain and plain flour)
2 tsb bicarbonate of soda
1 tsp all spices
1 tsp salt
Frosting:
200g room temp. Philly cream cheese
50 g room temp. butter
300 g icing sugar
1/2 lemon's freshly squeezed juice
Turn on the oven to 190-200 degree Celsius.
Peel and grate the carrot. Mix the butter with the sugar (both brown and vanilla), until it is pale yellowish (or actually brownish from the sugar). Add the egg one by one to the mixture and keep whisking. Add the orange zest and juice, keep on whisking. Add the grated carrot, the walnut the flour and the spices etc. (called dry ingredients) fold in carefully.
Butter and flour the bottom of the cake tin and put a grease-proof paper in that (tailored to fit). Pour the mixture in the prep. cake tin and bake in the oven for 45 minutes. When checking if the the cake is ready then poke a toothpick in the middle and if it comes out clean then your cake is ready. Let the cake cool.
For the frosting, I made a mistake that I mixed melted butter with fridge cold cream cheese-- Don't do it--.
So sieve the icing sugar, add the lemon juice, start mixing. Add the room temp. cream cheese and the butter. Let it cool down in the fridge and then use it as you wish-. It can be only frosting or filling as well. Main thing is that you let the frosting dry on the cake on room temperature! Enjoy.

Tepertős pogácsa - hello!
Az öcsém megkívánta a múlt héten a tepertős pogácsát. El is ejtett egy megjegyzést, hogy mostanában a pékségekben kapható tepertős pogácsák (nálunk így mondják, mielőtt még valaki felhördülne, hogy az ám töpörtyús...) már nem olyanok, mint gyermekkorunkban (mondja ezt ő a 22 évével...:). Tény, hogy a nagyi és az anyu pogácsáját nem lehet felülmúlni holmi ipari pogácsával, viszont igazán jó, hajtogatott tepertős pogácsát sem annyira könnyű csinálni, ezért igazából elment a megjegyzés a fülem mellet...majd múlt pénteken voltam a vásárcsarnokban ("véletlenül" átmenőbe) és gyorsan vettem 25 dkg tepertőt.
Mivel a tepertős pogácsa nem csak finom, de eléggé időigényes is (nem mintha a kettő kapcsolatban állna egymással) ezért a készítéséhez szerintem hétköznap nem érdemes nekiállni (hacsak vki nem időmilliomos). De én ezt is megoldottam. Péntek este kezdtem el csinálni, és szombat reggel sütöttem ki :) Nem viccelek, bajnok lett a pogácsa. Csak van egy rossz tulajdonsága ennek a pogácsának, mégpedig, hogy könnyen szublimál. Vasárnap reggelre a tároló dobozba már morzsa sem volt...különös módon eltűnt az összes pogácsa. Ki érti ezt?! :D
Recept (előkészület kb. 15 perc, dagasztás, kelesztés, hajtogatás - sok idő, sütés: kb. 20 perc):
Lisztet átszitáljuk. A közepébe csinálunk egy mélyedést, és oda öntjük a langyos, cukros tejben feloldott élesztőt (Fontos, hogy ha manuálisan csinálunk mindent, akkor a hozzávalók legyenek szobahőmérsékletűek). Elkezdjük kézzel keverni, de elég merev, mozdulatlanok legyenek az ujjaink. Mintha egy karom lenne a kezünk, kavargassuk szépen a lisztet és az élesztőt (vicces, de ez így működik). Ha sikerül nagyjából elvegyíteni, akkor adjuk hozzá egyesével a többi hozzávalót a tepertőt kivéve (a só nem váletlenül kétszer van benne. Kell az a két teáskanál a tésztába, meg a tepertő krémhez is kell egy kicsi só. Nem lesz túl sós. De aki nem szereti vagy diétázik, az csökkentse bátran a só mennyiségét). Egy szép homogén tésztát kell kapnunk, amit elkezdhetünk gyúrni. Én ha kézzel dolgozok, akkor kb. 5-7 percet szoktam gyúrni a tésztát a kelesztés előtt.
Ezután kb. 40 percet kell keleszteni. Míg kel a pogácsa, addig le kell darálni a tepertőt, de figyeljünk rá, hogy a bőrét ne darájuk bele, mert az eléggé darabos maradhat, ami ha belesül a pogácsába, akkor megkeményedik és esetleg kellemetlen pillanatot nyújhat, ha egy kemény bőrdarabra ráharapunk (és nyílván senki sem akar munkát adni a fogorvosának, ha nem muszáj...). Szóval darájuk, sózzuk borsozzuk. Aki szereti a csípőset, akkor az rakjon bele csiliport is.
Ha megkelt a pogácsa, akkor nyújtsuk ki kb. fél cm vastagságú téglalapra. Kenjük meg a tepertővel, és gondolatban harmadoljuk el a téglalapot és hajtsuk be jobbról is és balról is, hogy a lapok egymást fedjék. Majd ha ez megvan, akkor 90 fokot fordítunk rajta, és megint téglalap alapúra nyújtjuk. (óvatosan, mert szakadhat. Ha szakad, akkor nekem az vált be, hogy egy kicsit lisztezem az kiszakadt részt és dolgozok tovább) Ismét három részre osztjuk a téglalapot, és most alulról és felülről is behajtjuk. Majd 30 percig kelesztjük. Ezt a folyamatot háromszor megismételjük (gyúrni már nem kell, mert akkor sosem lesz leveles tésztánk :). Ha kész van a harmadik hajtogatás, nyújtás, megint hajtogatá stb. akkor vagy hűtőbe rakjuk éjszakárni vagy elkezdünk dolgozni vele.
Ha frissen dolgzunk vele, akkor kinyújtjuk kb 2 cm vastagságúra, éles késsel rácsozzuk a tetejét, tojással megkenjük és pogácsaszaggatólval kiszaggatjuk. Sütés előtt 30 percig még kelesztük.
A tepsibe sütőpapírt rakunk és arra helyezzük a pogácsát. 180- 200 fokos sütőben 18- 20 percig sütjük. Akkor jó, ha az alja is szép barna (neeeem fekete).
Ha marad tésztánk amit már nem tudunk szaggatni, akkor én simán össze szoktam gyúrni, megint nyújtani, lekenni, szaggatni stb. pedig a nagykönyv szerint ezt nem szabad. Eddig nekem még ezzel nem volt problémám.
Ha egy éjszakára hűtőbe rakjuk a nyers pogácsa tésztát, akkor feltétlenül vagyük ki egy órával sütés előtt és akkor dolgozzunk vele tovább ha már szobahőmérségletű lesz.
Ilyen lesz az eredmény, ha ügyesek vagyunk:

THE ULTIMATE BROWNIE
Yes, I have to say (without being pompous) that last weekend I baked the best brownie of my life! It was so lovely, gooey, chewy and dense inside and at the same time crunchy on the outside. But...let the pictures talk for themselves. (no, this slice was not broke but the missing bits were rather eaten by someone... :)
Brownie (prep. 20 mins, baking 30 mins)
150 g flour
1 tsp salt
2 tbs cocoa powder
400 g dark chocolate
220g butter
110g brown sugar
220 g caster sugar
5 eggs
1 pack of vanilla sugar
50g desiccated coconut
1 overripe banana
Turn on the oven to 180 degrees.
Melt the chocolate (Mr Microwave is my friend) at a low temperature. Let it cool to room temperature if overheated. Mix the two (actually three with the vanilla) types of sugar, and beat with the melted butter until the sugar dissolves. Add the eggs one by one and beat it with the food processor for 2-3 minutes (not more. too much air will prevent the brownie from being thick and chewy). Mash the banana with a fork and add to the liquid ingredients. Finally, add the melted chocolate to the mixture.
Sieve the flour, cocoa powder and the salt into the chocolate mixture. Add the coconut and stir evenly (it does not need too much stirring).
Pour the mixture into a baking tin (25cm x 35 cm) and bake in the oven for 30 minutes. When checking if ready poke a toothpick into the brownie and if it comes out almost clean (it does not have to come out clean) then it is ready. Take out of the oven immediately. Don't over bake it because it will end up in a dry piece of brick. Enjoy (I am sure that you will)!

Melt the chocolate (Mr Microwave is my friend) at a low temperature. Let it cool to room temperature if overheated. Mix the two (actually three with the vanilla) types of sugar, and beat with the melted butter until the sugar dissolves. Add the eggs one by one and beat it with the food processor for 2-3 minutes (not more. too much air will prevent the brownie from being thick and chewy). Mash the banana with a fork and add to the liquid ingredients. Finally, add the melted chocolate to the mixture.
Sieve the flour, cocoa powder and the salt into the chocolate mixture. Add the coconut and stir evenly (it does not need too much stirring).
Pour the mixture into a baking tin (25cm x 35 cm) and bake in the oven for 30 minutes. When checking if ready poke a toothpick into the brownie and if it comes out almost clean (it does not have to come out clean) then it is ready. Take out of the oven immediately. Don't over bake it because it will end up in a dry piece of brick. Enjoy (I am sure that you will)!
